Cider Syrup

This is great on Flap-o-Lanterns, 
or any other pancake or waffle!
It is also delicious as a topping 
or ice cream or apple cake!
1 c. sugar
2 T. cornstarch
1/2 t. pumpkin pie spice
2 c. apple cider
2 T. lemon juice

Mix sugar, cornstarch and pumpkin pie spice in a saucepan. (Mix thoroughly to avoid cornstarch lumps.) Stir in cider and lemon juice. Cook until mixture thickens and boils. Boil and stir 1 minute. Remove from heat. Serve over Flap-o-Lanterns.
