Quiche

Pastry:
1 1/4 c. flour
1/4 t. salt
1/2 c. margarine
Cut margarine into flour and salt until crumbly. Add Egg and mix until dough clings. (I usually knead it a little with my hand at the end). Press into the bottom and up the sides of a 9 1/2- inch springform pan.
8 eggs
2 1/2 c. milk (may use 1 %)
2 c. shredded Swiss cheese (8 oz.)
12 oz. bacon, cooked and crumbled
or 1- 1 1/2 c. cubed ham
Dash pepper
Beat eggs with whisk until just blended. Mix in milk and salt. Sprinkle cheese on crust and top with bacon or ham. Pour the egg mixture over the top. Sprinkle with pepper.
Bake at 425 degrees for 15 minutes and reduce heat to 375 degrees for about 45 minutes or until set in the middle. Let sit for 15 minutes before serving. Serves: 8-10.
