Omlets in a Mug

Are you getting bored of the same old breakfast, but mornings are a rush and you never have time to cook? Here is a great idea that only uses 1 mug and takes only a minute in the microwave! It is quick, easy and less cleanup. The big bonus is it tastes great! Here is my recipe:

1 egg
2 Tablespoons of milk or water
1 Tablespoon of diced ham, or bacon (lunch meat works great!)
1 Tablespoon of grated cheese of your choice
Salt and pepper to taste

Crack egg into mug & add milk. Stir in ham, cheese, salt and pepper. Place in the microwave and cook for 1 min. - 1min. 30 sec. depending on your microwave. (I do 1 min. 10 sec.) Out comes a fluffy, tasty omlet that can be eaten on the run!

(The only dish you have is a mug and a fork! The mug also keeps it hot longer than placing the omlet on a plate so it works great for those children who don't always come to breakfast when you thought they would!)

Flap-o-Lanterns

This is a great fall breakfast! It is fun for Halloween morning!

2 c. flour
1 T. baking powder
1/2 t. salt
2 T. sugar
1 t. pumpkin pie spice
2 eggs
1 3/4 cups milk
3 T. oil or melted butter
1/2 c. pumpkin

Mix all ingredients to make batter. Cook on a hot griddle. Can be made it the shape of pumpkins, with raisins or chocolate chips for faces. Great with applesauce or Cider Syrup.

Cider Syrup

This is great on Flap-o-Lanterns, 
or any other pancake or waffle!
It is also delicious as a topping 
or ice cream or apple cake!
1 c. sugar
2 T. cornstarch
1/2 t. pumpkin pie spice
2 c. apple cider
2 T. lemon juice

Mix sugar, cornstarch and pumpkin pie spice in a saucepan. (Mix thoroughly to avoid cornstarch lumps.) Stir in cider and lemon juice. Cook until mixture thickens and boils. Boil and stir 1 minute. Remove from heat. Serve over Flap-o-Lanterns.

Berry Yogurt Parfaits

This is a easy, nutritious summer breakfast, refreshment at a bridal shower, or healthy dessert!

Fresh strawberries, raspberries, boysenberries, blueberries, etc.
Yogurt (I like vanilla, or berry)
Granola

Layer berries, and yogurt in a glass dish or cup. Sprinkle with granola. Garnish with a berry on top. Serve! Yum!

Blueberry Muffins

(from America's Test Kitchen) 

 Sugar top:  1 1/2 tsp. lemon zest + 1/3 cup sugar, stirred together to combine
Jam center:  Cook 1 cup fresh blueberries with 1 tsp. sugar, breaking down some of the berries.  Cook until reduced to 1/4 cup.  Cool to room temperature.


Batter: 
2 eggs
1 1/8 cups sugar
4 Tbsp. melted butter
1/4 cup vegetable oil
1 1/2 tsp. vanilla
1 cup buttermilk


Dry ingredients:
2 1/2 cups flour
2 1/2 tsp. baking powder
1 tsp. salt


Cream eggs and sugar.  Add melted butter (cooled), vegetable oil, vanilla, and buttermilk.  Combine with dry ingredients, but mix only until the flour is just incorporated.  Over-mixing will result in tough muffins.  Add 1 1/2 cups fresh blueberries, and stir to incorporate.  Put 1 tsp. of batter into each of 12 paper lined muffin tins.  Top batter with 1 tsp. of the jam.  Cover the jam with enough batter to fill the muffin cups 3/4 full.  Sprinkle with a bit of the sugar topping.  Bake at 400 degrees until golden brown and set.  It should take about 17 minutes.
Makes 1 dozen

Recipe of the Week: Chili Egg Puff

- from Sunset Magazine, and the kitchen of Crystal Dunn (5th Ward)
10 eggs
1/2 cup flour
1 t. baking powder
1/2 t. salt
1 lb. of low-fat cottage cheese, small curd
1/2-1 lb. Monterrey Jack cheese, shredded
1/4 c.butter or margarine, melted
1 can of diced green chilies
Salsa


Variation: omit chilies and salsa, add 1/2 c. diced ham, and substitute Swiss cheese for Monterrey Jack cheese.

Beat eggs, until light and lemon colored. Add flour, baking powder, salt, cottage cheese and margarine. Mix well and stir in green chilies. Pour into well buttered 9x13" pan or spray well with cooking spray. Bake, uncovered at 350 degrees for 35 minutes until top is brown and center is firm. Serve with salsa.  Serves 8-10. 

*This can be assembled the night before and refrigerated until ready to bake. It is especially nice served with fresh fruit and cinnamon rolls. 
**If there is any leftover. It is also great for breakfast the next day. It heats up well in the microwave.

Recipe of the Week- Eggs Alfredo

from: Michele Higginson- (2nd Ward) Stake Provident Living Leader
 I like to make this recipe after Easter. 
It uses extra eggs and some of the extra ham I always have left.

6 eggs
1/4 C milk
salt and pepper to taste
1/2 C Alfredo sauce (from a jar is fine)*see sauces for Alfredo Sauce recipe
4 slices cooked ham, cubed
1T butter
6 slices wheat toast

In large bowl, beat eggs with milk, salt and pepper.  Melt butter in large saucepan over medium heat.  Add eggs, cook and stir till fluffy and moist. Stir in Alfredo Sauce and cubed ham.  Cook until heated through.  Serve on top of wheat toast. May also add sliced tomatoes or grated cheese. Serves: 6

Recipe of the Week: German or Oven Puff Pancakes

Here is another great egg recipe! It is one of our family favorites!


 6 eggs
1 cup milk
1 cup flour
1/2 t. salt
2-4 T. butter  or margarine

Heat oven to 425 degrees.
Put butter in a 9x13" pan and place in the oven until butter is melted.







Place all ingredients except butter in a blender and blend until batter is smooth
When butter is melted remove pan from oven and spread melted butter evenly across the bottom of the pan. Pour batter into 9x13 pan and return to the oven. Bake for 15-20 min. until pancake is puffed and golden brown. 







Cut into pieces and serve with fruit or syrup or both! Yum!

Serves: 6-8   Yum!

Recipe of the Week

Quiche
From the kitchen of: Crystal Dunn - 5th Ward

Pastry:
1 1/4 c. flour
1/4 t. salt
1/2 c. margarine

Cut margarine into flour and salt until crumbly. Add Egg and mix until dough clings. (I usually knead it a little with my hand at the end). Press into the bottom and up the sides of a 9 1/2- inch springform pan.
                                                                              
Filling:
8 eggs
2 1/2 c. milk (may use 1 %)
2 c. shredded Swiss cheese (8 oz.)
12 oz. bacon, cooked and crumbled
or 1- 1 1/2 c. cubed ham
Dash pepper

Beat eggs with whisk until just blended. Mix in milk and salt. Sprinkle cheese on crust and top with bacon or ham. Pour the egg mixture over the top. Sprinkle with pepper.

Bake at 425 degrees for 15 minutes and reduce heat to 375 degrees for about 45 minutes or until set in the middle. Let sit for 15 minutes before serving. Serves: 8-10.

Recipe of the Week

Huevos Rancheros
A nutritious, quick breakfast or busy day dinner.

1 fried or scrambled egg
1 corn or flour tortilla  (my family loves the ready to cook tortillas from Costco or Sam's Club)
Salsa



Any of your favorites such as:   lettuce, avocados, guacamole, tomatoes, sour cream, or cheese.


Cook egg and cook or warm tortilla. Layer tortilla, egg and salsa.
Add other toppings of choice. Enjoy!

Serves: 1
Increase recipe according to number of people serving!
